TIPS FOR FREEZING AND SERVING

Organization is the foundation of good nutrition. Below, I share some good practices to make your time in quarantine more productive.

This way, when you return to your routine, you will have a supply of natural elements, ideal for those who do not have much time to devote to a good diet.

Except for fruits with very watery pulp, all fruits can be frozen. I recommend washing them well, cutting them into small pieces and sprinkling them with a little sugar to accentuate the sweet taste. A little lemon juice will help preserve the color and prevent it from oxidizing or becoming unsightly.

As for vegetables, they should be washed and peeled, and in some cases even blanched. The blanching process is to lock in flavours and colours, and to ensure that they do not lose their nutritional properties. You should immerse the food in boiling water for no more than 3 minutes and then immerse it in ice water to stop the cooking process.

Leave the fruits and vegetables you like the most frozen in portions. This way you will have them ready for cakes, smoothies, fresh snacks and any other preparation.

FRUIT FREEZING CHART

FOOD  RAW OR BLEACHED DURATION
Pineapple Peel, core, cut into slices or pieces, sprinkle with sugar. 3 to 4 months
Banana Store peeled, whole or sliced, sprinkled with lemon juice. 6 months
Plums Keep whole or pitted, cut in half, placing the sprinkled halves on top. 6 months
Peach Keep whole or pitted, cut in half, placing the sprinkled halves on top. 6 months
Strawberry Washed and well drained with or without sugar. 12 months
Melon Peel, cut into pieces, sprinkle with sugar and lemon juice. 10 months

    

VEGETABLE FREEZING CHART

FOOD  RAW OR BLEACHED DURATION
Bell pepper Wash, remove the cores, dry well and freeze. They can be whole, in pieces or processed. 3 to 4 months
Celery Blanch for 2 minutes and freeze. 6 months
Onion Chop and store in plastic containers or Ziploc-type bags. 6 months
Corn Cook for 10 minutes, cool and set aside. To complete the cooking, cook for a further 20 minutes. 6 months
Avocado Peel, core, cut into strips or cubes, drizzle with lemon juice and freeze in portions. 12 months
Beet Peel, grate and store in containers. 10 months
