2 recipes for celiacs

We begin the new cycle of recipe books and in the month of Celiacs, with recipes for them.
 
SWEET COOKIES

Ingredients:

  • 400 g cassava flour
  • 170 g rice flour
  • ½ tsp. of royal
  • 6 tbsp. sugar
  • 110 g cold butter
  • 4 eggs
  • 1 tsp vanilla
Procedure:
Sift the flours and add the baking powder, leaving a space in the middle to place the butter; break it up with a fork until it becomes crumbly.
Add the lightly beaten eggs and vanilla until a dough forms; leave to rise for an hour and a half, then roll out to a thickness of 1 cm and cut with cutters, baking on greased baking sheets for 15 to 20 minutes.
These cookies can be eaten by the whole family. Give them a try!

 

BATTERED CAULIFLOWER WITHOUT EGG

This recipe can accompany meatless Mondays, it is a way to incorporate this somewhat forgotten vegetable into our daily cooking.
It is prepared with a beer base, but we should not be afraid to drink it with our children, since the increase in temperature causes all the alcohol it contains to evaporate during cooking. We can, however, use them reduced in alcohol.

Ingredients:

  • 750 g cauliflower
  • 200 ml of beer
  • 120 g flour (modified flour for celiacs)
  • ½ tsp royal
  • Water in sufficient quantity
  • Salt
  • Olive oil, preferably for cooking.

Procedure:
Wash the cauliflower and cook it in water with lemon and salt to taste, until it remains al dente.
Let it cool and drain, cutting it into bunches.
We mix the beer with the flour until we obtain a thick paste; we should obtain a mixture similar to toothpaste. We add more flour or more beer until we obtain it. We pass the grapes through this paste on both sides.
We heat the olive oil and place the bunches in it; we turn them until they turn golden.
We place it on absorbent paper to remove the excess.

In this way, we will be incorporating a vegetable into our children's diet in a different and somewhat more daring way.
