Preparation time: 45 Minutes. Makes 10 to 12 units
Ingredients:
- 11/2 cup oatmeal
- 2 tbsp. cinnamon
- 1 pinch of salt
- 2 bananas
- ½ cup applesauce
- ½ cup of nuts
Preparation:
- Place the dry ingredients in a bowl: oats + cinnamon + salt + processed nuts.
- Place the bananas in another, larger bowl and mash them. Then, add the apple compote and mix it in. If I don't have any ready-made compote, I can grate it on the fine side of a grater.
- Then mix the wet ingredients with the dry ones until you get a homogeneous paste.
- Using a spoon, place the mixture on a greased baking sheet in a round shape. I can use another spoon to ensure that the mixture stays on the baking sheet.
- Cook for 25 minutes at 180ºC.
- Makes about 10 to 12 units; store in an airtight container.
The fructose in the fruit itself gives the cookie its sweet taste. If I want to enhance it, I can add a small amount of brown sugar. In cases where there is a problem with diabetes or being overweight, sweetener can be added.
It is an excellent cookie to eat between meals, both for children and adults, since it provides the fruit and fiber of the oats.
