May 5th is International Celiac Day; 1 in 100 people are celiac, but 97% of them don't know it.
Celiac disease is caused by gluten in genetically susceptible people.
The most common symptoms are weight loss, vomiting, diarrhea, fatigue, abdominal distension, decreased growth, mood swings, and irritability. These symptoms may or may not be present.
The treatment consists of following a very strict gluten-free diet. Celiac patients should base their diet on natural products such as legumes, meat, eggs, fruits and vegetables, and gluten-free cereals such as rice, oats, rye, and cornstarch.
Processed products where it is difficult to guarantee the absence of gluten should be avoided.
