Broccoli mac & cheese

Ingredients:

  • 300 gr frozen broccoli
  • 500 gr of macaroni
  • 3 tablespoons of olive oil
  • 3 tablespoons of flour
  • 4 cups of milk
  • 100 gr of Gouda cheese
  • 100 gr of Cheddar cheese
  • 2 tablespoons of green or red onion
 
Preparation:

Place a pot of water and salt on the heat. When it is boiling, add the pasta and cook it until it is “al dente”. After this time, strain it and leave it to drain.

Place another pot of water and salt on the heat. When it is boiling, add the broccoli and cook for 4 minutes. After this time, drain and chop into small pieces.

In a medium saucepan, heat the oil until it reaches a certain temperature, add the flour and stir well for 2 minutes with a wooden spoon so that it does not stick or burn. Add the milk little by little, stirring constantly, and reduce the heat to low. Cook everything for 10 minutes until it thickens.

Then add the two types of grated cheese and, when they melt, the broccoli. Remove from the heat and stir well. Finally, add the pasta and mix everything together.

Place on the food and decorate with the green onion on top, as well as, if you like, some cherry tomatoes.
