Matambre with milk

This recipe is no longer seen on family menus, perhaps because it is thought to require a lot of preparation, but it is simple, nutritious, and special for winter.
 

Ingredients:

  • 1 ½ kg of matambre
  • 1 lt of milk
  • Seasonings to taste: salt, pepper, garlic, oregano or parsley.
 
Preparation:

Remove the fat from the flank steak and cut it into square pieces. Place it in a baking dish or deep bowl with the milk and let it rest for at least 12 hours in the refrigerator.

Then it is placed in a moderate oven and placed directly on the baking tray, otherwise it is placed in one and left for at least 50 minutes,

My grandmother, once she was ready, would beat some eggs and add grated cheese. She would pour this mixture on top and wait for the egg to coagulate. It can be accompanied with a delicious mashed potato.
