Falafel
Ingredients:
- 300g chickpeas soaked overnight
- 1 onion
- 2 cloves of garlic (quantity to taste)
- 2 tablespoons fresh parsley and 1 tablespoon fresh cilantro
- 1 teaspoon ground cumin
- 1 teaspoon of baking powder (Royal type)
- Whole sesame seeds
- Mild olive oil (for frying)
- Salt and black pepper, freshly ground (to taste)
Preparation:
Once the chickpeas are hydrated, boil them with salt until they are al dente. Strain them and process them together with the onion, garlic, parsley, cumin and baking powder.
With this paste, form balls and coat them with whole sesame seeds.
Allow to cool and fry in very hot oil. Drain on absorbent paper.
Yogurt sauce
Ingredients:
- 1 natural yogurt
- 2 tablespoons olive oil
- 1 clove of garlic, finely chopped
- The juice of half a lemon
- Chopped fresh mint, salt and black pepper
Preparation:
Mix the yogurt with the oil, garlic, mint, lemon and pepper and serve over the previous preparation.
A different way to consume chickpeas in the International Year of Legumes!!!
